For cleaning smelly hands after chopping onions or garlic, just rub them on a stainless steel spoon. The steel is supposed to absorb the odor.
If a marinade calls for cornstarch, add it last. It will act as a binder.
While you don't absolutely need one, a wok is the one piece of cooking equipment you may want to purchase before you start cooking Chinese food.
Stir fry vegies
When stir-frying vegetables, cook the toughest and thickest vegetables for a longer period
Before you chop chili peppers, rub a little vegetable oil into your hands and your skin wonʼt absorb the spicy chili oil.
Preparation is key
Be sure to have everything prepared before you start cooking: the vegetables washed, drained and cut; the meat cut and marinated; the sauces prepared.
Always use fresh ginger, not powdered.
